Herbsaint is Donald Link's original New Orleans argument: French technique, Southern ingredients, and Louisiana memory handled with restraint. It sits on St. Charles Avenue downtown, neither old-line Creole nor fashionable small plate theater.
The menu changes enough to reward repeat visits, but the register is steady: gumbo with discipline, housemade pasta, Gulf fish, duck, vegetables that taste like someone cared before they hit the pan. Lunch is underrated and often calmer than dinner.
This is one of the city's most durable serious restaurants because it does not confuse seriousness with stiffness. It is grown-up in the best way.
